Quick and Easy Sausage and Peppers Pasta

Happy Sunday!
As promised here is the recipe for you if you have lots of peppers coming from your garden ..

 Here is what you need..
olive oil
pasta .. I love these orecciette shaped noodles
small container of chicken stock or broth, one cup
peppers ... we used banana peppers and green bell peppers and one tiny red pepper .. if you like spicy add some hot peppers
( when I make this off garden season I use one or two bags of the mini sweet peppers from the grocery store ) you need about 4-6 cups of chopped peppers
1/2 onion chopped
Sausage .. I use the loose sausage not in links
salt and pepper
red pepper flakes
fresh or dry basil
fresh or dry oregano
2 TBSP butter
1/2 cup half and half
chopped cherry tomatoes
parmesan or romano cheese
 chop up all your peppers and onions..add them to 2 tbsp of olive oil and saute until a little soft..about 8--10 minutes ..Then add your sausage and cook until done. Start your pasta water to boil.

 When your sausage is done add the butter and stock.. let simmer on low..add your pasta when it is finished cooking..also about 1/4 cup of the salted pasta water .. and about 1/4 cup of grated cheese..add in the half and half .. salt, pepper and red pepper flakes to taste ..

toss in your herbs 
add some chopped cherry tomatoes..and serve.. quick and easy and so good!
 top with some more grated cheese .. my family loves this for dinner.. hope yours does too!

Grilled Lemon Chicken and White Sauce

 Here it is .. the grilled lemon herb chicken and white sauce for dipping recipe!
 I use a gallon size  zip loc bag and added 6 boneless skinless chicken breasts that I slice in half horizontally
1/2 cup olive oil
zest and juice from 1 lemon
salt and pepper
red pepper flakes
2 tablespoons each fresh chopped  oregano and basil.. I only make this recipe with fresh , so if you are using dried herbs the amounts need to be lessened .. the fresh herbs make a huge difference ..
I marinate the chicken for 30-45 minutes..
Then cook it on the grill until cooked all the way thru ..

 To make the white sauce  you will need
 1/2 cup mayonnaise
zest from one lime plus the juice
pinch of salt and pepper
 1 tablespoon each  fresh oregano and basil chopped small,, mix it all together and refrigerate until the chicken is ready .. my family loves this "sauce" on everything.. chicken, roasted potatoes , vegetables, italian sausage  etc.. It just tastes like summer!
when the chicken is thoroughly cooked squeeze 1/2 of a lemon on top and grate Parmesan or Romano cheese on the top .. top with a few sprigs of oregano and basil .. It is quick and very easy and everyone will love it!

Fast and Easy Chicken Caprese

Good morning!
If you have lots of cherry tomatoes and basil you need to make this for dinner! It is so good I have made it twice this week already!
What you need..
boneless skinless chicken breasts ( I split them in half so they are thinner and cook faster )
salt and pepper
3 Tbsp. olive oil and 1 tbsp. of butter
handful of fresh basil
heaping tablespoon of brown sugar
about 2 cups sliced in half cherry tomatoes
1/2 cup balsamic vinegar 
mozzarella cheese
Using a big frying pan with your butter and olive oil melted add your chicken that has been seasoned with salt and pepper on both sides.. cook until almost all the way done ..mine were about 7 minutes a side because they are thin..
cut your cherry tomatoes in half 
 and chop up your basil while your chicken is cooking ..

 Pile up your chicken on the sides and add the vinegar to the middle of the pan .. add the brown sugar and the cherry tomatoes ..mix it up  a little bit and place your chicken back all over the pan ( try for a single layer so the cheese gets evenly distributed).. add most of the basil to the top of the chicken ( reserve a little for the finished dish ) then add the mozzarella cheese in slices or shreds all over the top of the chicken ..put a lid on the pan on low/ medium until the cheese is melted ..

we like ours on angel hair pasta ..with a sprinkle of Romano cheese ..make sure you add a little of the tomatoes and balsamic over the top .. so good and very fast and easy! Even my husband and son who don't like tomatoes love this recipe ..
