Fast and Easy Chicken Caprese

Good morning!
If you have lots of cherry tomatoes and basil you need to make this for dinner! It is so good I have made it twice this week already!
What you need..
boneless skinless chicken breasts ( I split them in half so they are thinner and cook faster )
salt and pepper
3 Tbsp. olive oil and 1 tbsp. of butter
handful of fresh basil
heaping tablespoon of brown sugar
about 2 cups sliced in half cherry tomatoes
1/2 cup balsamic vinegar 
mozzarella cheese
Using a big frying pan with your butter and olive oil melted add your chicken that has been seasoned with salt and pepper on both sides.. cook until almost all the way done ..mine were about 7 minutes a side because they are thin..
cut your cherry tomatoes in half 
 and chop up your basil while your chicken is cooking ..

 Pile up your chicken on the sides and add the vinegar to the middle of the pan .. add the brown sugar and the cherry tomatoes ..mix it up  a little bit and place your chicken back all over the pan ( try for a single layer so the cheese gets evenly distributed).. add most of the basil to the top of the chicken ( reserve a little for the finished dish ) then add the mozzarella cheese in slices or shreds all over the top of the chicken ..put a lid on the pan on low/ medium until the cheese is melted ..

we like ours on angel hair pasta ..with a sprinkle of Romano cheese ..make sure you add a little of the tomatoes and balsamic over the top .. so good and very fast and easy! Even my husband and son who don't like tomatoes love this recipe ..

A Chandelier and Basil Cubes

 Hi ! Thanks for stopping by ! I am so excited to show you our new chandelier ! Back in February we started taking down walls and  ceilings.. Here is a link to the start of that fun :)
 We couldn't find a chandelier in any of the stores around here that we really liked but we found this online from LampsPlus.
 It has amber colored crystals instead of white, and I think that goes better with our dining room furniture.
 We had to put all those elements on it , it came pretty naked and they give you a diagram of where to put it all ! That part took longer than the installing it part !
 My daughter in law ,daughter, and I put all the pieces on.
 I still don't have the inside of my hutch decorated the way I would like it to be , but Fall is coming so I can decorate it for Fall !

 This morning I cut all my basil off to make basil cubes for the freezer. It is like having fresh basil all year.
 First you wash all your basil, then put it in paper towels and squeeze the water out .
 I then use my mini food processor with a couple Tbsp.of olive oil .. I keep adding the basil until its all been chopped up.You just want the leaves to be coated with the olive oil , not drenched or soupy.
 Then spoon it into ice cube trays, push the basil down to make sure it is compacted into cubes.. Put it in the freezer until they get hard , pop them out , (sometimes you need to take a knife down the side of the cube to get them out).. I keep mine in zip loc freezer bags , and just take one out and pop it into sauce, or marinades . Basil is great because it grows back and you can do this a few times during the growing season ! Hope you make some basil cubes !

Basil cubes

This morning I cut back all my basil plants washed, dried it and stuck it in the food processer with some olive oil.. I then put it in ice cube trays, into the freezer until they are hard and then the cubes will go in zip loc bags in the freezer. The basil stays green and the cubes are perfect to toss in sauce or marinades, or even a couple kinds of soup I make. Its like having fresh basil all year ! I hope to do this a few more times before it frosts here.
 This was the basil I used for the cubes this morning..
still can't beleive how good my walmart flowers look ! :)

I made doughnuts for the kids this morning using Grands biscuits , they dip them in powdered sugar and cinamon sugar..
